When I go to new places I usually research tourist attractions to find at least one that is touristy and one that locals love. It is always important to go into a new area with an idea of what a good use of your time will be. You also need to know what is worth a visit from people who actually live there. They know about the hidden gems or maybe looked over interesting places.
The second thing I look for is a new type of food to eat or a well loved local place. I like to give eating something new a chance and order whatever is a local favorite. Food is always a good measure of a city. I also look for a well reviewed Thai restaurants. I love Thai food and going to new restaurants allows me to find new things on the menu to try. It is also a little treat for myself after I try the local fare.
After I have a few things jotted down to see, do, or eat, I look up places that cater to my hobbies or interests. My partner is really into D&D, so we usually check out a game store and see what they have. We love books so we like to find a used book store to look for vintage or hard to find books. We might check out an art museum depending on the exhibits. I go to indie craft supply shops to look for locally produced yarns, or popular fabrics, or even an art gallery.
All in all, if I am going to a new city, I try to do a few traditional things that tourists do and then I do things that have meaning for me. It really builds a connection with the city when you find out what makes them tick deep down. My love of alpacas began when I went to an indie yarn shop and found some yarn made from their fleece. I came home with a new lifelong interest and dream from a random encounter during a vacation. For me, that is what travel is about! Being open to new things and connecting with your new surroundings.
